Ingredient
- 3 medium eggplants
- 2 clove of garlic
- 1 tbsp of fresh lemon juice
- 1/3 cup Tahini (sesame seeds paste)
- 1/3 cup plain yogurt
- 1/2 tsp salt
- 2 tbsp of olive oil
- pickled turnip and cucumber (optional)
Direction
- Barbecue the eggplants until it is burned on the outside but soft on the inside , remove the eggplant off the barbecue and let cool down little .
- Under running water peel the eggplant , then move to a bowl and mash it for only a little bit ( do not make it like mash potato)
- In another bowl mix tahini, yogurt, garlic and lemon juice , add the eggplant to the mix and mix it very well.
- Place Baba ghanouj in plate, top it with olive oil served with pita bread.
