Baba ghanouj

Ingredient

  • 3 medium eggplants
  • 2 clove of garlic
  • 1 tbsp of fresh lemon juice
  • 1/3 cup Tahini (sesame seeds paste)
  • 1/3 cup plain yogurt
  • 1/2 tsp salt
  • 2 tbsp of olive oil
  • pickled turnip and cucumber (optional)

Direction

  1. Barbecue the eggplants until it is burned on the outside but soft on the inside , remove the eggplant off the barbecue and let cool down little .
  2. Under running water peel the eggplant , then move to a bowl and mash it for only a little bit ( do not make it like mash potato)
  3. In another bowl mix tahini, yogurt, garlic and lemon juice , add the eggplant to the mix and mix it very well.
  4. Place Baba ghanouj in plate, top it with olive oil served with pita bread.
