Shish barak is a wonderful dish, yogurt sauce and dough stuffed with meat almost like a dumpling, it one of my favorite dish.
Prep time about 3 hours cook time 35 min Level Medium
Ingredient
- 2 cups of all purpose flour
- 1/2 cup of milk
- 2 tbs vegetable oil
The filling:
- 14 oz of ground beef
- one chopped onion
- 2 tbs of vegetable oil
- 1/2 tsp seven spices
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
- salt as desire
- 1/4 cup of pine nuts
The sauce:
- 3 lbs plain yogurt
- 3 tbsp of all purpose flour dissolved in one cup of water
- 4 cups of water
- 4 minced garlic cloves
- 1 cilantro bunch chopped
- 2 tbsp vegetable oil for frying the garlic and cilantro
Instruction
- In a medium size pan heat oil to fry the chopped onion for about 5 min then add the ground beef cook well then add the seasoning to it and in another small pan with one tbsp of oil fry the pine nut until it is light brown then add to the meat mix and let it sit aside and use when it is cooled down, it just easier to work with it when it is on the cold side.
- Meanwhile Mix flour with milk and oil to form a dough and set a side.
- When meat cooled down take the dough and divide it into two pouch with a rolling pin roll out the dough and with a cookie cutter (the smallest circle you can find or using the smallest cup you have in your house if you don`t have or can`t find the cookie cutter) cut out small circle fill it with the meat close tightly put them in a tray and bake for about 20 min.
- In a big pot pour yogurt with the dissolved flour on a medium high stir constantly until it bubbles up add some salt and the 4 cups of water, now you can add the stuffed dough pieces to the yogurt and lower temperature cook for about 20 min.
- meanwhile heat 2 Tbsp of olive oil in a small pan, add garlic and cilantro fry for about 5 to 8 min turn off the heat and take half of it and add to the yogurt mix and let it cook for another 5 min.
- Use fry pine nut and the remaining Cilantro garlic mix as a garnish at the time of serving and Mjadra is served with this dish.
